How to Make Delicious Chicken Dishes with Ravika Biryani Masala, Chicken Gravy Masala and Chicken Chilli Masala

Ravika Biryani Masala
Ravika Biryani Masala is an aromatic spice blend used to make biryani, a layered rice and meat dish. It contains spices like caraway seeds, stone flower, nutmeg, mace, fennel seeds, star anise, bay leaves, cloves, cardamom, cinnamon and more. You can use it to make chicken biryani, a popular dish that is cooked with marinated chicken, fried onions, saffron and basmati rice. Here is how to make it:
Ingredients
- 1 kg chicken pieces with bones
- 1 kg basmati rice
- 12 small onions, thinly sliced
- 10 tbsp ginger garlic paste
- 2 tsp red chilli powder
- 1 tsp garam masala powder
- 1 tsp pounded chilli
- 1/2 tsp black pepper powder
- 1 tsp turmeric powder
- 5 tbsp coriander powder
- Salt to taste
- 2 bay leaves
- 1 tsp cumin seeds
- 1/2 tsp nutmeg and mace powder
- 1/2 tsp badyan powder (fennel seed powder)
- 1/2 cup yogurt
- 6 large tomatoes, chopped
- 7–8 prunes (aalobukhara)
- 1 cup oil
- Whole spices: 2 green cardamom, 2 brown cardamom, 3 cloves, 3 black pepper, 2 cinnamon sticks
- Essence: 1 drop
For layering
- 5–6 green chillies, slit vertically
- A bunch of mint leaves
- 1 lemon, sliced
- Yellow food colour: 1/2 tsp in each layer
Method
1. Soak rice for 20 mins.
2. Heat oil and fry onion until they are golden brown. Take out and spread on paper. After they get crispy, grind them.
3. Add ginger garlic paste and fry for 20 mins or until the smell goes away. Add all the whole spices and chicken. Fry for a while. Add fried onion, yogurt, tomatoes, prunes. Cook until chicken is tender. Add badyan powder, nutmeg and mace powder and essence. Remove from stove.
4. Boil rice in a large pot with some mint leaves, whole spices and lemon juice. When rice is half-done, drain the water.
5. Divide rice and chicken into three parts. In another large pot, spread one layer of rice. On top of it, spread one part of chicken. Sprinkle food colour, mint leaves, green chillies and lemon slices. Repeat with the remaining rice and chicken.
6. Cover the pot with a tight lid and steam on low flame for 20 mins.
7. Serve hot with raita and salad.
Ravika Chicken Gravy Masala
Ravika Chicken Gravy Masala is a spice blend that can be used to make a rich and creamy gravy for your chicken curry. Ingredients
- 500 g chicken pieces with bones
- 2 tbsp oil
- 1 tsp cumin seeds
- A pinch of asafoetida
- 2 onions, finely chopped
- 1 tbsp ginger garlic paste
- Salt to taste
- 2 tomatoes, pureed
- 2 tbsp Ravika Chicken Gravy Masala
- Water as needed
- Coriander leaves for garnishing
Method
1. Heat oil in a pressure cooker or a pan. Add cumin seeds and asafoetida. When they crackle, add onions and fry until golden brown.
2. Add ginger garlic paste and salt and fry for a few minutes.
3. Add tomato puree and Ravika Chicken Gravy Masala and cook until oil separates.
4. Add chicken pieces and water as needed. Mix well and pressure cook for 3–4 whistles or until chicken is cooked. If using a pan, cover and cook on low flame until chicken is done.
5. Garnish with coriander leaves and serve hot with roti or rice.
Ravika Chicken Chilli Masala
Ravika Chicken Chilli Masala is a spice blend that can be used to make a spicy and tangy chicken dish. It contains spices like red chillies, coriander seeds, cumin seeds, fennel seeds, fenugreek seeds, mustard seeds, curry leaves and more. You can use it to make chicken chilli masala fry, a dry and crispy dish that can be served as a starter or a side dish. Here is how to make it:
Ingredients
- 500 g chicken pieces with bones
- Salt to taste
- 1/4 tsp turmeric powder
- 2 tbsp oil
- 2 tsp mustard seeds
- A few curry leaves
- 2–3 green chillies, slit
- 2 tbsp Ravika Chicken Chilli Masala
- Lemon juice as needed
Method
1. Marinate chicken pieces with salt and turmeric powder for 15 mins.
2. Heat oil in a pan or a kadai. Add mustard seeds and curry leaves. When they splutter, add green chillies and chicken pieces. Fry on high flame for 10 mins, stirring occasionally.
3. Lower the flame and add Ravika Chicken Chilli Masala. Mix well and cook until chicken is dry and crisp.
4. Sprinkle lemon juice as needed and serve hot.
